Recipe of the Week – Slovenian Beef Goulash with Creamy Polenta and Chive Cream

 

Our New Year’s Eve party is always themed on somewhere we traveled during the year.

This fall, we enjoyed a wonderful bicycle trip in Slovenia. Slovenia is a small country in the northernmost part of former Yugoslavia, at the crossroads of several cultures. Dishes from Slovenia span several cooking styles including Slavic (Central and East European) and Italian influences.

This wonderful goulash was our main dish on Saturday night and it was a big hit. Our friends brought other eastern European side dishes and we had a memorable meal.

Bed and Breakfast in Hershey

Goulash ingredients - Serves 4-6 (I tripled the recipe for the party)
• 4 thick slices (4 ounces) hickory-smoked bacon, diced
• 1½ pounds lean beef such as round or well-trimmed chuck, cut into 1 to 1½-inch cubes,   and dried with paper towels
• 1 cup chopped onion
• 1cup dice green pepper (optional) – (I added the green pepper because that’s the way I     remember goulash)
• ½ cup dry red wine
• 1 cup beef or veal stock
• 1 15-ounce can diced tomatoes in tomato juice – (I used Italian style)
• 2 tablespoons tomato paste
• 1 tablespoon sweet Hungarian paprika
• 2 cloves garlic, minced
• 1 1/2 teaspoons sea salt
• 1/8 to 1/4 teaspoon ground cayenne pepper

Polenta ingredients
• 3 cups water
• 1 teaspoon salt
• 1 cup cornmeal
• 1 tablespoon butter

Chive cream ingredients
• ¼ cup sour cream or yogurt
• ¼ cup cottage cheese, sieved (Next time I make it I may not bother with the cottage         cheese or just use ricotta instead –no sieving)
• 2 tablespoons snipped chives

Make the goulash: In a medium skillet, cook the diced bacon over moderate heat until In the same skillet, raise the heat to medium-high and brown the meat(s) well, 6-10 minutes. Remove the meat to a crock-pot or Dutch oven. Drain all but 2 tablespoons fat from the skillet.

In the same skillet, add the chopped onion (and peppers if you use them) and sauté until just turning translucent, 2-3 minutes. Add the wine and reduce over high heat, until almost all of the wine has evaporated. Add the stock, tomato paste, paprika (or substitute), minced garlic, salt, and cayenne. Stir to blend the ingredients.

In a crock-pot: Bring to a simmer and pour into the crock-pot. Cover the crock-pot and turn on to low and cook up to 8 hours or as directed by your appliance.

In a Dutch oven: pour the broth mixture over the bacon and meat. Bring to a simmer on the stovetop, cover, reduce heat to very low and simmer on the stovetop 1½ hours until meat is done.

I simmered it on low for a very long time in the Dutch oven. Both the crock-pot and Dutch oven versions tasted wonderful.

Make the polenta: In a medium saucepan, bring water to a boil. Whisk in salt and cornmeal. Cover and cook over very low heat for 30 minutes. Stir in 1-tablespoon butter and keep warm until ready to serve.

I remember Goulash served over noodles, so I also had noodles as a choice. In Slovenia, they often added potatoes or served them along side.

Make the chive cream: In a small bowl, thoroughly mix together the sour cream, cottage cheese, which you have pressed through a sieve, and the snipped chives. Refrigerate until ready to use. May be made up to 1 day ahead.

To serve: Spoon the polenta onto a plate, top with beef goulash. Place a dollop of chive cream on top. Enjoy!

Recipe of the Week — Shrimp Appetizer

We have had some trouble getting our recipes of the week to post to everyone — so now we’ll be including them in our Blog as well as on Facebook. Here’s a great recipe that should be perfect for upcoming Holiday parties.

2 pounds cooked medium shrimp, peeled and deveined

1 medium red onion, sliced and separated into rings

2 medium lemons, cut into slices

1 cup pitted ripe olives, drained

1/2 cup olive oil

1/3 cup minced fresh parsley

3 tablespoons lemon juice

3 tablespoons red wine vinegar

1 garlic clove, minced

1 bay leaf

1 tablespoon minced fresh basil or 1 teaspoon dried basil

1 teaspoon salt

1 teaspoon ground mustard

1/4 teaspoon pepper

Marinate 8 hours or overnight in the refrigerator. Remove bay leaf. Place in pretty bowl. No cocktail sauce needed. Enjoy the compliments!

Snow on the Ground – Can Skiing Be Far Behind?

On Saturday 10/29 we had the biggest October snowfall on record. The long-range forecast is calling for a snowy winter and we are off to a great start!

As many of our guests at The Inn at Westwynd Farm know, we are avid skiers. We don’t want the beautiful fall season to be over too soon, but the unexpected cold and snow this weekend reminded us it‘s time to start planning for some winter fun!

Roundtop Mountain Resort is just an easy 45-minute drive from our Hershey B&B. While it may not be the biggest mountain in world, it truly offers something for everyone. If you don’t have a lot of time, consider night skiing.

The ski school is outstanding and delights in introducing both kids and adults to the sport.

The children’s programs are wonderful. It’s amazing how fast even 5 year-olds can progress when they are having fun!

The staff also understands the adult beginner and will get you off to a great start.  We didn’t start skiing until we were in our 30’s – it really is never too late.

There’s plenty of terrain for the more advanced skiers, too, including two double black diamonds. With the installation of a new Skytrac quad chairlift, they will add another Expert trail “Patriot” and they promise – BUMPS!

Of course for the teens (and teens at heart) there are super terrain parks.

Even the non–skiers in your family can have great time. Snow Tubing is a great way to experience the fun of winter recreation from a whole new perspective. No experience is necessary, simply grab your tube and let the fun begin!

The WiFi system has been completely replaced for much better reception. In addition there is a special seating area in the Food Court with power outlets for people who would like to use their laptops. The seating area has great views of the courtyard and slopes.

We prefer to go mid-week when we feel like we have the mountain to ourselves. For us, it’s the ideal hooky day.

Bring Your Bikes

For us, there is nothing better than to head out for a long leisurely bike ride on a crisp fall day. Our area is just full of wonderful trails and rides. When time is short, we enjoy a few nice little 6-8 mile loops near The Inn at Westwynd Farm. There are even some good hills to test your fitness. If you are comfortable biking on country roads, we can map out even longer routes for you. When we have more time, we put the rack on the van and head out for one of our favorite trails.

The Jonathan Eshenour Memorial Trail is owned and maintained by the Township of Derry (aka Hershey) and was named in memory of Jonathan Eshenour, a young and vibrant member of our community who was fatally injured in a biking accident.

The 13-mile plus trail travels through most of Hershey and provides access to parks, neighborhoods and commercial establishments. It’s a wonderful avenue to exercise, experience nature, and enjoy the company of friends and family. The trail travels conveniently near the township’s parks and the recreation center, providing additional activities such as sports, fishing, picnicking, and much more.

One of our favorite rides is actually a combination of two trails.

The Conewago Recreation Trail, located between Route 230 and the Lebanon County line, northwest of Elizabethtown. This 5-mile trail, formerly the Cornwall-Lebanon rail line, connects to the Lebanon Valley Rail Trail, and follows the Conewago Creek

Diverse and peaceful, the 5-mile Conewago Trail has a flat cinder and earth surface. The rail-trail passes through wooded sections with a canopy of trees, pastoral meadows, active farms and beautiful sections along the meandering Creek.

The trail links up at the county line with the Lebanon Valley Rail-Trail, which runs another 8 miles to Cornwall. Recently completed additions stretch this rail-trail 20 continuous miles from Elizabethtown to Lebanon. The trail offers beautiful wooded sections as well as lovely farmland views.

The Capitol Greenway is a 20+ mile necklace that rings Harrisburg Pennsylvania’s Capital City, and was designed to provide its visitors an opportunity to hike, ride bicycles, skate, jog, walk their dog, practice up on flora and fauna identification and generally appreciate nature.

The trail has some of the most beautiful and enjoyable natural surroundings that the area has to offer. We especially like the stretch along the Susquehanna River.

The York Heritage Trail is a little bit of a drive but worth it.  Established in 1992 and covering 176 acres, the Heritage Rail Trail County Park is 21 miles long and runs north from the Mason Dixon line just south of the Borough of New Freedom through Glen Rock, Hanover Junction, and Seven Valleys to the Colonial Courthouse in the City of York. The trail connects to Maryland’s 20-mile long Northern Central Railroad Trail. In addition to the Colonial Courthouse, three historic structures are located on the trail; Hanover Junction and New Freedom Train Stations and Howard Tunnel.

Trayn’d Band Hershey B&B

The Mount Hope Trayn’d Band is a living history group that portrays what life was like for a 16th century soldier. The Elizabethan equivalent of a local militia or “national guard,” the Trayn’d Band will have a period encampment on the Faire grounds, and welcome patrons to visit and experience what life was like for an Elizabethan soldier! Firing demonstrations, pike drills, and general soldiers’ merriment will abound around the camp!

Like many caverns in the Mid-Atlantic states, Indian Echo Caverns is a limestone cave. Cut through Beekmantown limestone, which is over 440 million years old, the caves were formed through the erosive properties of water. As time progressed, geological forces led to an “uplift” of the surrounding limestone, eventually allowing more and more water to flow through the formation. As the water flowed over the limestone, it began to create small crevices. These small crevices led to larger ones and eventually, over a series of millions of years, it created the caverns as they are today.

The tour is 45 minutes in length. A professionally trained interpretive guide will explain the geology, history and show you the beautiful formations of the caverns.

Indian Echo Caverns is closed for Thanksgiving, Christmas Day, and New Year’s Day

There is also a great miniature golf course, Challenge Family Fun, at the entrance to the caverns and an ice cream shop with an arcade. It‘s a wonderful way to spend a summer afternoon in Hershey.

We make sure our summer doesn’t end without a visit to the Butterfly House at Hershey Gardens, and we’re always sure to take a camera and usually a curious child. At its peak in mid–summer, the Butterfly House will be home to close to 400 or so of these colorful creatures, representing 25 North American species.

ZooAmerica – A Sweet Treat for Animal Lovers

At The Inn at Westwynd Farm we think a trip to Hershey is just not complete without a visit to Hersheypark’s ZooAmerica.

It’s the perfect place to get up close and personal with some of your favorite animals, as well as some that you may not know so well. It’s home to over 200 animals native to North America and 75 separate species. You can meet, pet and admire a wide variety of amazing creatures during the zoo’s Animal Encounters all throughout the summer.

When walking through the zoo on a recent visit, we encountered this little guy, a baby American alligator with cool coloring and a serious stare!

The bobcats and cheetahs were amazing. The Carnivore Activity session gave us a chance to watch these cats explore their natural senses and to see how the reacted to new scents within their environment.

Among the things we really like about the Zoo is the fact that each and every animal can be easily found by following a clearly marked route. This helpful path circles around the entire zoo which is loosely divided in 5 geographic areas of North America — the North Woods, Big Sky Country, Cactus Community, Eastern Woodlands and Grassy Waters. We really like the Cactus Community. The Gila monster is a particular favorite of my grandsons. Close to where the Gila monsters are found, another display is completely dark, and is home to some fascinating nocturnal animals. The bats are always a big hit. Another great area is the black bear environment. The last time we were there, two lively bears entertained viewers by jumping in and out of the water. My favorite, the prairie dogs are just natural comedians. I could spend hours watching them.

The zoo is located right across from Hersheypark on Park Avenue, easily reached by a crosswalk. Admission is $10 for adults and $8 for Children – but is included free with your Hersheypark Ticket, and parking right beside the zoo is free. Hours vary seasonally; currently it is open from 10Am until 8PM.  We find the zoo to be a great break from the hubbub of the park or a lovely way to spend a few hours if the amusement park is not your cup of tea.

Sweet Summer Sounds In Hershey

We love living in Central Pennsylvania. There are wonderful things to do here all year – but for us summer means Music!

If you love music and wine as much as we do here at The Inn at Westwynd Farm, we’d like to share about a whole series of events that mix music with beautiful outdoor settings and local wines for you to enjoy. It is so much fun!

Many of the vineyards in the area have wonderful fresh air concerts planned all summer long.

Here is just a sampling:

Nissley VineyardsThis lovely spot is about 25 minutes from the inn. “Music in the Vineyards” is a series of open-air lawn concerts, held every Saturday evening on the spacious lawn of the Winery from July 2 through Labor Day Weekend, from 7:30 pm to 10:00 pm. Bring a picnic supper, good friends and lawn chairs or a blanket for all…or enjoy a romantic evening under the stars for just the two of you, as the best of regional big bands, light-rock and oldies groups perform for your listening pleasure and for dancing on tree-shaded patios. It is a summer must for us.

Moon Dancer VineyardAbout 40 minutes from our Hershey B&B, this French Country Chateau overlooks the beautiful Susquehanna River in Wrightsville, and offers premium European Style dry wines as well as select Pennsylvania sweet wines. We love the stunning views of the vineyards and surrounding countryside. It is Pennsylvania at its finest. Their summer concert series offers something for everyone. Complete details can be found on their site.

Naylor Vineyards – Spend an evening dancing under the stars to the best Big Band music in the area. in the lovely Pavilion. Concerts are planned every Saturday of the summer, beginning the 3rd Saturday in June through the 2nd Saturday in September. They also host several classic rock bands on Friday evenings.

The Hotel Hershey Hosts “Jazz on the Veranda – May 20 thru September 30

Truly just three minutes from our farm, The Hotel Hershey hosts live jazz performances on Friday evenings from 7:30 to 10:30 p.m.  Enjoy a relaxing evening of jazz by the fire pit with a cocktail on the scenic veranda. A special drink menu and selection of light fare are available. You’ll find us there often.

Another favorite for us are the Jazz Cruises on the Susquehanna River every Thursday night from 5:30 to 9:00 pm starting in June. What could be better than cool jazz, cold drinks, and summer breezes aboard the Pride of the Susquehanna River Boat. The authentic stern paddlewheel riverboat holds 120 passengers and features a variety of the best local jazz musicians every week, including a cash bar, snacks and appetizer menu, and a spectacular view of the City of Harrisburg. Available every Thursday, except Sept. 8, 2011. The Pride of the Susquehanna is a 30-minute drive from our Hershey Inn.

Harmony Hall Sunday Lawn Concert Series – June 11 thru September 25, 2011

If you’re looking for a way to unwind on Sunday, Harmony Hall features Sunday performances by a variety of musical styles, ranging from R&B funk, Country Top 40, 60′s-90′s Dance, Jazz, Country Rock and Blue Grass. The gates open at 12-noon, rain or shine. Food and drinks will be available from Noon to 4 pm, and the concerts run from 2 pm-5 pm. Harmony Hall is located at 1400 Fulling Mill Road, Middletown, PA 17057 about 20 minutes from our Bed and Breakfast in Hershey.
