Makes 2 loaves
This very moist dense flavorful bread is chock full of
apples and a
favorite of our guests
2 eggs
2 cups sugar
½ cup canola oil
2 cups flour
2 tsp cinnamon
2 tsp baking soda
½ tsp salt
1tsp vanilla
4 cups apple (peeled, cored and chopped)
1 cup walnuts, coarsely chopped
½ cup raisins
Preheat oven to 350 F
Spray two loaf pans - coat with cinnamon sugar
Beat together eggs, sugar rand oil. In separate bowl
combine flour, cinnamon, baking soda and salt. Add to
egg mixture and beat well. Add vanilla and apples; then
add nuts and raisins. Stir until well combined. Spoon
into prepared loaf pans and bake for approximately 50-60
minutes. Turn out onto cooling racks .Cool completely
before slicing.
Snickerdoodles
(So Good with a cup of tea)
3 ¾ cups all purpose flour
½ teaspoon baking soda
½ teaspoon of cream of tartar
1 cup of butter
2 cups sugar
2 eggs
¼ cup milk
1 teaspoon vanilla
3 tablespoons sugar
1 teaspoon ground cinnamon
Grease a cookie sheet. Stir together flour, soda, cream
of tartar and ½ tsp salt. Beat butter for 30 seconds;
add the 2 cups sugar and beat until fluffy. Add eggs,
milk and vanilla; Beat well. Add dry ingredients to
beaten mixture beating till well combined. Form into one
inch balls. Roll in a mixture of the 3 tablespoons
cinnamon and sugar. Place balls 2 inches apart on a
cookie sheet; flatten slightly with the bottom of a
drinking glass. Bake in a 375 oven for about 8 minutes
or till light golden brown. Makes 66 (or so)
Shoo Fly Cake
Similar to the pie - a Penna. Dutch favorite
And so easy to make
1 cup molasses
2 ¼ cups boiling water
1 tablespoon baking soda
4 cups all purpose flour
1 16oz. light brown sugar
¾ cup oil
In a large bowl mix the molasses, boiling water and
soda. In a separate bowl blend the flour, brown sugar
and oil. Reserve 4 cups for topping. Set aside. Mix
remaining dry ingredients with the liquid. Pour into a
lightly sprayed 9x13inch pan and top with crumbs (Have
faith, it will be soupy but the finished cake is
wonderful). Bake in a 325 oven for 40-50 minutes.
