Steel Cut Oats Breakfast Delight Recipe

Elaine Lapinsky submitted this recipe to us and we love it! Here’s what she says about why she loves this recipe…
“I enjoy eating wholesome, real food so I try to incorporate as many nutritious foods in one recipe. I use organic items as often as possible. I use the steel cut oats as they are less processed. All of the add- ins have a nice amount of fiber and will keep you satisfied until lunch!”

Sounds good to us! A hearty and nutritious breakfast is so important. Here’s how to make this ‘Breakfast Delight’!

Prepare the night before:

  • 2 Cups steel cut oats in a large pot
  • 4 cups boiled water
  • ¼ -1/2 cinnamon
  • ¼ tsp salt
  • Dried fruit: raisins, dried cherries
  • Put a lid on pot and let this soak overnight

In the Morning:

  • Cook for about 5-10 min and stir often. You may need to add more water.
  • Add the following, then cover with pot lid, shut off the burner and allow the frozen fruit to thaw:
    • ½ cup canned pumpkin
    • Frozen blueberries
    • Frozen raspberries
    • ¼ cup Milk
    • 2 TBSP organic unrefined coconut oil
  • Add to the bowls:
    • Sliced bananas
    • Sliced strawberries
    • 1 TBSP Peanut butter and/or Almond butter
    • 1 TBSP molasses

Mix together and ENJOY!

Hint: Open a can of pumpkin and put tablespoon scoops of the pumpkin on a large plate and place it in the freezer. It freezes solid in a few hours or less. Take the plate out and in a few minutes, you can pop them off the plate and put in a freezer bag for more mornings of yummy oatmeal!
